The marsh wort, as it is known in Bulgarian folk medicine, is an edible* plant from the licorice family. The scent of the marsh skunk is described as unpleasant. In autumn , it forms delicious root tubers , which, dried and ground, are added to dishes or to bread flour, and can also be eaten raw. In the past, they were often used when other food was lacking. The taste of the tubers is nutty and earthy, and the cooked young stalks resemble that of asparagus, which is why they are used as an asparagus substitute. It has healing properties**: antiseptic, antispasmodic, hemostatic, etc. Its pinkish-purple flowers attract bees and other pollinators.
